An Introduction to Spencer Watts

The world today is a funny and controversial place...where is your place?

It seems to me that people are always in disagreement, but the one thing we can agree upon is good food. It is the key to the soul, the heart of big gatherings and for me, the footprint of creativity. One of my first memories involved food. I was two years old and I was eating Dim Sum. Maybe it was the picture of me in a highchair with sticky rice on my face or just simply the flavour, but either way I was hooked for life.

I was introduced to Sushi at around 5 years old. By this time my parents must have thought, “How can we afford this kids eating habits?"

I can always remember a house full of friends and family: the aroma of simmering sauces, fresh seafood and the clinking of glasses. When I think of it now, I grew up in the world's finest restaurant... my home. Both my mother and father are exceptional home chefs. They took 20 years teaching me everything they know, now it is my turn to show them how to do it better.

I entered Chef training in High School. In the 9th grade, I competed in a provincial gingerbread competition. When they put the 3rd place ribbon in my hand, I decided I wanted to do this for a living. Not only for an income, but for the passion that was burning inside me. After high school, I put in a few shifts at the family business, but I could not deny my inner passion for food. One day after work, I went to the Keg and told the kitchen manager that I wasn't leaving without a job. I was hired and this began my career as a future chef. I worked in corporate restaurants for about a year and landed a job in a fine dinning Spanish restaurant. That was the turning point in my career. The next step was culinary school. I graduated from the Pacific Institute of Culinary Arts in early 2000. In the following 6 years after graduation, I worked at some of Vancouver's finest restaurants and hotels. I learned from the cities best chefs and I added my own passion and original flair. In May 2006, I attended the City TV Master Chef competition and took first place! That is a day I will never forget. I made an appearance on City Cooks later that year and fell in love with the camera.
