Butter Chicken 1 med onion finely diced 1/3 cup fresh ginger finely diced 4 tbs crushed garlic 3 tbsp veg oil 1/3 cup Cilantro root - chopped 2 tsp Cumin 2 tsp Paprika 2 tsp garlic/chili paste (Sambal) 2 small cans tomato paste 1/2 lb butter (cold, cubed) 2 cups heavy cream 1 1/2lb boneless, skinless chicken thighs Salt & pepper to taste
Sautee onions and ginger together for about 2 min. on med heat. Add garlic and season with salt and pepper. Add your dry spices and cilantro sauté those ingredients together for another 2 min. on med heat. Season again with salt and pepper. Add tomato paste and sambal incorporate well. Add butter and cream gradually stirring gently check seasoning before adding chicken. Add chicken bake approximately 1hour 45min in a 350° oven.
Riata 1/2 english cucumber - remove seeds - finely dice 1 roma tomato - remove seeds - finely dice 1/4c cilantro chopped juice of 1-2 lemons remove seeds a few dashes cumin 4 heaping Tbs plain yogurt 2 heaping Tbs sour cream
