BC Spot Prawn Cakes
13 - raw BC spot prawns peeled and chopped
2 - tbsp finley diced red onion
1 - tbsp thinly sliced green onion
1 - med clove garlic chopped
hefty pinch of salt
3 - dashes Worcestershire sauce
3 - dashes tobasco sauce
juice of ½ a lemon
1 - egg yolk
3 - tbsp Japanese mayonnaise
¾ - cup panko bread crumbs
unsalted butter and olive oil for cooking
Smoked Jalapeno Aoli
1 - large shallot chopped
2 - cloves garlic chopped
1 - medium size jalapeno pepper,
chopped and seeded
2 - tbsp chopped thyme
1½ - tbsp dijon mustard
2 - egg yolks
3 - tbsp red wine vinegar
1½ - tbsp salt
cracked black pepper
2 - cups vegetable oil
1 - tsp liquid smoke
Steamed Mussels
3 lb Mussels
3 tbsp olive oil for cooking
1/2 med onion (diced)
2 tbsp garlic (finely chopped)
3/4 cup water or white wine
salt & pepper
1/2 cup parsley (chopped)
6 small tomatoes (cut in half)
5 tbsp cold unsalted butter
1/4 cup cambozola cheese
Crisped Crab Legs
1 live dungeness crab
(cooked 5mins and cleaned)
2 beaten eggs
1/2 cup cornstarch
salt & pepper
2 cups canola oil for cooking
1/4 cup unsalted butter (melted)
1/2 lemon (sliced)
