Double Roast Leg of Lamb

For roasting
1 4-5 lb lamb leg - deboned and tied
salt
pepper
1 tbsp olive oil
For Rub
4 heaping tbsp Dijon mustard
3 heaping tbsp garlic (finely chopped)
hefty pinch of salt
fresh ground pepper
2 tbsp fresh rosemary (chopped)
2 tbsp panko bread crumbs

Spring Roasted Vegetables
1 each turnip, yam, sweet potato (peeled)
1 fennel bulb
6 med carrots (peeled)
5 roma tomatoes (halved)
1/2 large red onion
salt
steak spice
1/4 cup fresh parsley (chopped)
juice of 1/2 lemon
3 tbsp olive oil

Ginger Green Salad
1/2 shallot (finely diced)
2 tbsp fresh ginger (finely diced)

1 tbsp garlic finely chopped
1/4 cup rice wine vinegar
2 tbsp light soy sauce
1 tbsp Mirin
1/4 cup cilantro (chopped)
1/2 cup canola oil
8 cups cold mixed greens
1 orange (peeled and segmented)
toasted sesame seeds.
