Vegetarian- Earth Show
The recipes below are from an upcoming "Spence on the Coast" show which will air in November. In this show Spencer visits Henry Reed Organic Produce in Gibsons where we get many of the vegetables used at the restaurant. Spencer and Martin had a great time filming and it will be a fantastic show. Check back for exact air dates! Have a look at some of the photos of that day below.
Raspberry vinaigrette dressing
1 shallot finely diced1 cup fresh raspberries
1/4 cup vinegar rice wine
salt
pepper
1 tbsp mirin
2 tbsp french style maple syrup
4 tbsp 17,000 year old balsamic vinegar (or other balsamic vinegar)
4 tbsp thyme finely chopped
1/2 cup vegetable oil
Sungold Tomatoes & Goat Cheese
2 cups sungold tomatoes (halved)
2 large basil leaves thinly sliced
salt
pepper
1/4 cup EV olive oil
1/2 lb crumbled goat cheese
2 cups mixed organic greens from Henry Reed organic farm
Stuffed Green Pepper
1 organic green pepper (halved, seed removed)
1 cup sushi style rice (cooked)
2 tbsp butter
salt
pepper
1 tbsp sushi style soy sauce
1 tbsp sambal garlic chili sauce
grated parmesan
Provencal tomato
1 cup panko bread crumbs
oregano
thyme
basil
salt
pepper
1 cup EV olive oil
2 garlic cloves chopped
2 med roma tomatoes
Fried Eggplant
8 small chinese eggplant
1 onion halved & sliced
2 tbsp EV Olive oil
2 cloves garlic chopped
salt
pepper
1 tbsp chopped rosemary
